Need some delicious and healthy recipes at your fingertips? Students from the University of Colorado College of Nursing and Central Colorado AHEC have partnered in developing this site to offer food pantries, grocery stores and consumers a quick way to use food items commonly found in food pantries to make healthy meals. Have a bountiful supply of tomatoes?—there are recipes for that. Mangoes?  There are recipes for that! Financial challenges don’t need to lead you down a road to obesity and chronic disease!  Use our website to eat delicious and low sodium, low fat and low sugar meals. It is accessible to you anytime. Print what you like—tell others!

The R.I.C.H. Cookbook was created to help our community members find healthy recipes for their families, utilizing common ingredients obtained from local food pantries.  This free, online recipe database is the collaborative result of students studying Public Health at Central Colorado Area Health Education Center (AHEC).  centralLogo_4

This project was prepared by the following nursing students from the University of Colorado College of Nursing as partial fulfillment of course requirements for NURS 4207 Public Health Nursing: Alison Winters & David HarrisCUCollegeOfNursing

We encourage you to print any recipes and promote healthier eating habits to help combat chronic diseases and live a fulfilling life.  Special thanks to Tim Sanford at Metro CareRing food pantry, who works passionately to ensure that fellow Coloradans have access to resources and a pathway to self-sufficiency.New-Logo-High-Def
