Easy Cowboy Caviar

1 (14 ounce) can corn, drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
2 tomatoes diced (may substitute with 1 can diced tomatoes)
1 avocado (diced or 2 small)
1/2 cup salsa
3 green onions (diced)
1-cup fresh cilantro (chopped)
Black pepper to taste
Lime juice (optional)

1. Combine all ingredients in a large bowl.
2. Gently toss to combine.
3. Cover and chill for 30 minutes to an hour until ready to serve.
4. Serve in lettuce wraps, over greens or brown rice.
Yield: 10 servings
