1 1/2 cup water
1 cup couscous (uncooked, wheat)
1/2 cup low-fat buttermilk
1/4 cup plain low~fat yogurt
2 tbsps. fresh dill (chopped)
2 tablespoons white vinegar
1 tablespoon olive oil
1 cup red bell pepper (chopped)
1/4 cup green onion (thinly sliced)
2 cucumbers (peeled quartered lengthwise and sliced about
salt and pepper to taste
1. In a medium saucepan, bring water to a boil and gradually stir in couscous.
2. Remove from heat, cover and let stand 5 minutes; ﬂuff with a fork, cool.
3. Combine buttermilk, and next 6 ingredients in a large bowl; stir well with a whisk.
4. Add couscous, bell pepper, onions, and cucumbers; toss gently.
