1 (2 ½ pound) beef brisket
Vegetable cooking spray
4 ½ cups sliced baking apple (about 2 large)
2 ¾ cups sauerkraut, drained
1 teaspoon caraway seeds
1 (14 ¼ ounce) can no salt added chicken broth
10 medium size round red potatoes, quartered
- Trim fat from brisket. Place meat on a rack in a roasting pan coated with cooking spray. Arrange apple slices over meat; spoon sauerkraut over apple, and sprinkle with caraway seeds. Drizzle broth over and around brisket. Cover and bake at 325 degrees for 1 ½ hours.
- Arrange potato around meat; baste potato and meat with pan juices. Cover and bake 2 hours or until potato is tender.
- Transfer meat to a serving platter. Arrange apple, sauerkraut, and potato around meat; drizzle with 1 cup pan juices. Makes 10 servings
